I thought it would make a great thread if we could post some of our favorites. Maybe someone uses a different spice or something. I had one the other day with sliced radishes and it was awesome. Dark Cloud Posted July 16, 2010 Share Posted July 16, 2010 I like tater salad but get tired of the cold mayo based ones. The answer... warm bacon potato salad! Cook your potatos to desired doneness. I dont typically measure but while there cooking wisk together roughly, 3 tablespoons white-wine vinegar 2 tablespoons olive oil 1 tablespoon dijon or whole grain mustard 1 tablespoon lemon juice 2 cloves chopped garlic salt n pepper Cook off 4-8 pieces of cut up bacon and drain away most of the fat, and add to the dressing. After draining the potatos and when they are still warm, toss with the dressing. I like to add a red pepper chopped big enough so people can avoid them along with a can of whole black olives. Some fresh herbs like basil or parsely and you have a tasty colorfull dish. Serve warm or room temp, but it is great cold the next day also...
