Grilled Mexican Sweet Corn

Oh man was this good! For a little different twist on sweet corn, give this a try!

Mexican Sweet Corn:

Ingredients:

Corn - husks removed

Vegetable Oil (or melted butter)

Mayonnaise

Chipotle Chili Powder

Garlic Salt

Fresh Ground Pepper

Lime Wedges (optional)

Preheat your grill to medium high. Rub corn lightly with oil (or butter) and place on the grill until lightly charred all over, 6 - 10 minutes, turning periodically. Meanwhile, combine mayo, chili powder, garlic salt, and pepper to taste. Remove corn from grill and spread a little of the mayo mixture on the corn. Serve with the lime wedges on the side for an added burst of flavor.

Adjust the amount and/or type of chili powder for desired heat.
