Italian Sausage

For 3 lbs. lean pork butt, ground:

3 garlic cloves, crushed (or about 3/4 tsp. granulated)

1/4 tsp. dry basil

1/2 tsp. dry oregano

1/8 tsp. dry rosemary

1/2 Tbs. fennel seeds

1/2-1 Tbs. red pepper flake (depending on how hot you want it)

1/2 tsp. salt

1 tsp. black pepper

1/4 dry white wine

-Mix seasonings and pork in a large bowl well by hand.

-Add the wine and mix through the meat.

-To make this recipe a sweet version, cut out the red pepper flake, and add another 1/2 Tbs. of fennel seed (1 Tbs. total)
