The Italian dressing is the way to go. I take it one step further and marinate the breast meat for 2 full days in Zesty Italian, then add a water chestnut on one end, a jalapeno pepper chunk on the other end, and then wrap it in bacon and grill it. The spice of the jalapeno totally blends with the sweet/zest of the Italian dressing. By far my favorite way to eat a duck!!!
