picking spinach

I'm growing spinach for the first time and cant find the seed package and was wondering when its best to pick the leaves for eating.

Anytime theres leaves,dont pick em all so the plant can keep producing.When the plant starts putting up s seed stalk (bolting)the leaves will start to get bitter time to remove them unless you like the taste keep em.My spinich bolted 1 type 2 weeks ago another I removed couple days ago,It's a cool weather plant,I replanted the area with beets.
