Finnish Fish Pasty

Kalakukko (Finnish Fish Pasty)

8 Herring, filleted (about 2 pounds). Whitefish or lake trout are also good.

Dough:
1 cup rye flour
3 cups white flour
4 tsp. baking powder
1 tsp. salt
2/3 cup shortening

Mix flour, baking powder and salt together. Cut in shortening with pastry blender or two knives until the mixture is in the size of peas. Sprinkle in cold water, 1 Tbsp. at a time, adding enough water until the mixture is moist enough to hold together as in a pie-crust-dough. Toss it lightly with a fork. Divide the dough into 8 portions and rollout each piece on a lightly floured surface.
Put a fillet on a piece of dough, cover with onion slices. Season with salt, pepper and butter to taste. Fold over rest of dough and seal the edges. Repeat for each herring. Bake for approximately 45 minutes at 375 degrees. Serving suggestions: you might wish to halve a green olive and garnish each pasty, giving it the appearance of a fish eye.
