Guest Posted October 9, 2002 Share Posted October 9, 2002 My mother-in-law kind of ruined the kids (4 & 2) earlier this year to eating our catch by overcooking the poor sunnies until the bones would no longer pull out cleanly. I've spent all summer trying to do something that the kids will like - Lemonade Rock Bass!!!!Bonelessly fillet any panfish with a heavy "shoulder" section - Rock Bass, Crappie, Smallmouth whatever. Soak fillets in lemonade (yup, lemonade) for about 30 minutes. Roll in dry instant pancake mix (Krudteaz is my fave) and fry in as little oil as possible. Serve with ketchup, tartar sauce, or even plain. "RobertC, how the heck did you think of lemonade?" - you might ask. I'd told The Boy all day that we were gonna cook it with lemon - "you'll like fish with lemon, I bet" and after cleaning a mess of Rock Bass and getting my trusty cast-iron nice & hot - No Lemon!!!!
