I read in one of your posts not to have water in your zip lock bag with the fish becasue it creates bacteria.
Do you mean when it is in the fridg, or when freezing or both?

Just wondering, because i like to have my fillets in water, in the zip bag, no air, when I freeze them to protect against freezer burn.
Is this a no, no, or what?
If so, I would assume the same would go for folks that take venison and do the same thing only with milk cartons.
I wouldn't think there would be any problem with freezing this way, but perhaps during the thawing process.

Not sure.

Hi.

When I freeze my fish I DO put water in the bag and purge out all the air. I know some people actually dab the fish completly dry before they freeze them...I have found no difference in this.

When I refridgerate, I purge out all the air and what water I can.

I do not salt my fish either. If they are fresh and you don't want them to curl, allow them to dry some and be closer to room temp before dropping them in the pan or deep fryer.
