Smelt

I usually just deep fry these little guys in beer batter but was wonder if you could just pickle them like you would northern. Has anyone ever tried this??? They are about perfect size to fit right in a quart jar(minus the head and guts)!!!!!

Smelt are too delicately textured, they would end up very soft (mushy) after pickling.
