Shallow fried fish

I came across this one night before preparing some crappie fillets...

In a large shallow bowl, combine 1 part all purpose flour, 1 part cornmeal, and 1 part wheat germ, plenty of fresh ground black pepper, and other spices, cayenne, garlic, etc.

In a smaller bowl, whisk 2 eggs with a tablespoon of water.

Dust fish fillets with plain flour, dip into the egg, then dredge in the flour/cornmeal/ wheat germ mixture.

Add a 1/4 inch or less, oil or shortening (palm oil works great) into a large skillet of electric fry pan, heat to 350-370 degrees. Fry fillets till golden brown, tranfer to a rack lined with paper towels, after draining briefly, transfer onto clean paper towels.

These fillets are amazingly crispy and flavorful.

Refrigerate the leftovers, and heat in a 400 degree oven on crumpled foil lined baking sheet, for a few minutes on each side, for crispy leftover fried fish.
