Cooking Walleye--READ THIS

Give this one a whirl and let me know how it turns out.

- 1 ½ cups soft bread crumbs - 2 tbsp minced fresh garlic
- 1 tsp dried thyme - 2 cloves garlic minced
- 1 tsp grated lemon peel - ½ tsp salt
- ¼ tsp lemon-pepper seasoning - ¼ tsp paprika
- 4 Walleye fillets - butter spray


In a bowl, combine the first eight ingredients; set aside. Pat walleye dry. Place,skin side down, in a 13 x 9 in. x 2 in. baking dish coated with nonstick cooking spray. Spritz waleye with butter-flavored spray; cover with crumb mixture. Spritz crumbs with butter-flavored spray. Bake, uncovered, at 350 degrees for 12-15 minutes, or until the fish flakes with a fork.

I got this one from a buddy of mine, its my favorite walleye dish. Walleye Gumbo: -1lb boneless walleye cut into one inch cubes.-8cups of chicken broth.-1lb smoked sausage(if you like spicy use Johnsville hot liks or Cub brand cajun)sliced into 1/2 inch thick pieces.-1/8tsp cayenne.-1tbs fresh minced garlic.-1/2tsp of white pepper,oregano,thyme and black pepper.-1/2lb of bacon diced.- 1c chopped each of green pepper,red pepper,red onion,white onion,celery.-1tbs of gumbo pile(pronounced pee-lay if you can find it, at any store in the spice isle).-1cup cooked white rice. Next saute' the bacon and strain the fat. Remove bacon and measure the bacon fat in a measuring cup. Put the fat back into the pan and heat until it begins to smoke and measure the same amount of flour and add the flour to the fat.Whisk the mixture until it gets a little darker than a brown paper bag.The longer it cooks the darker it gets. Becareful not to over or under cook it. Next pour your chicken broth into a large kettle or deep sauce pan.Place the kettle on medium heat.Next add all other ingredients and the flour/fat mixture called (roux) except walleye. Simmer the pot for 45min to 1 hour stirring often.The longer it simmers the more flavor it will have.But when you first smell it you wont be able to wait more than and hour.The last step is to cook the white rice and add to the pot. The final step is to add the walleye.One the walleye is added,its important to STIR GENTLY.You dont want the fish to fall apart. The walleye will take 5-7 minutes to cook.When it turns white, the Gumbo is done. I like to serve this dish with boxed cornbread(jiffy or bettycrocker) add one can of whole kernel corn.1cup shredded cheddar cheese and if you like spicy like me,add 1/2 diced jalapenos.Add all these ingredients to the boxed mixture. Follow the rest of the directions on box for cooking times. Enjoy!!!

bake stuffed....

for a 2-4# eye

gut and rinse the eye, do not fillet

take a small box of stove top stuffing
mix in

1/2 to 1 cup uncooked,shelled shrimp
1/2 to 1 cup scallops (either small bay scallops or chopped large sea scallops)
1 small onion (finely diced)
1 teaspoon finely chopped garlic

in the stuffing, instead of water use a white wine, chablis etc...

stuff the pig with all of the stuffing.

place on a large foiled cookie sheet,

if you want to, thinly slice a fresh lemon
place 3-5 slices down the side of the fish.

lightly sprinkle with dill.

slice butter pads and cover 50% of fish (on side)
take 1/2 cup wine and 1/2 cup water, pour into bottom of pan.

drape with a loose foil canopy

bake in oven @ 325 for aprox 25 mins, (total time depends on actual weight of fish)

with practice you can even do this on an open fire...

good eating!!!!

OK try this one, bye a bag of doritos & dump out half the bag, then take a rolling pin & smash the doritos in the bag till they are nice & small, dump them into a big bowl, then put the remaining chips back into the bag & smash the rest up & then add them to your bowl, then add a cup or so of flower,also i add 3-4 tablespoons of black pepper then mix real well. then I take 2 eggs & a half a can of beer & mix together in a seperate bowl, pat your fillets dry then dredge them in beer batter then in doritos mix, i cook them in a frying pan with a light oil for a couple minutes on each side then put them in oven on 350 for 10 minutes or till they flake apart with a fork. The batter should be nice & crisp after the oven. its basic but give it a try & let us know what u think. ricbak

take your recipe with the doritos(4 cheese)but use 1/3 doritos, 1/3 smashed cheeze its(crackers), 1/3 bread crumbs.
skip the flour.works great on any kind of fish. pan fry. if you want you can double dunk/coat the fillets for a crunchier product.

    • If you really want to treat your wife (and yourself) with a remote operated trolling motor, the Minn Kota Ulterra is about easy as it gets.  Auto stow and deploy is pretty awesome.  You just have to turn the motor on when you go out and that the last time you have to touch it.   24V 80lb.  60 inch shaft is probably the right length for your boat.  They ain’t cheap - about $3k - but neither one of you would have to leave your seat to use it all day.
    • Wanderer, thanks for your reply. I do intend for it to be 24 volt, with a thrust of 70-80. Spot lock is a must (my wife is looking forward to not being the anchor person any more).  With my old boat we did quite a lot of pulling shad raps and hot n tots, using the trolling motor. Unlikely that we will fish in whitecaps, did plenty of that when I was younger. I also need a wireless remote, not going back to a foot pedal. We do a fair amount of bobber fishing. I don't think I will bother with a depth finder on the trolling motor. I am leaning toward moving my Garmin depth finder from my old boat to the new one, just because I am so used to it and it works well for me. I am 70 years old and kinda set in my ways...
    • Dang, new content and now answers.   First, congrats on the new boat!   My recommendation is to get the most thrust you can in 24V, assuming a boat that size isn’t running 36V.  80 might be tops?  I’m partial to MinnKota.     How do you plan to use the trolling motor is an important question too.     All weather or just nice weather?   Casting a lot or bait dragging?   Bobber or panfish fishing?   Spot lock?  Networked with depth finders?  What brand of depth finders?
    • We have bought a new boat, which we will be picking up this spring. It is an Alumacraft Competitor 165 sport with a 90 horse Yamaha motor. I will be buying and installing a trolling motor,  wondering if I can get some recommendations on what pound thrust I will want for this boat?  Also, I will be selling my old boat, is there a good way to determine the value on an older boat ( mid-80's with a 75 horse 2-stroke  Mariner motor)  I will appreciate any help with these questions.
