Looks like a good site, Ed-- have to check it out fully here some time.

Just polished off the rest of my smoked catfish (better than salmon?) And 4th of July, I smoked up two turkeys for the gang-- best turkey I've ever eaten, hands down. They agreed. Few hickory sticks and a bunch of green branches from a nearby apple tree. Sears just so. Remember the oxygen mask if you get too close. But that's the way we like it, right?

Now to start on my next big project, building my own brick smoker to replace my little two rack jobber.
