PEATMOSS Posted February 21, 2006 Share Posted February 21, 2006 I've got a whole pile of wild blueberries in my freezer from last summer,looking to make a batch or 2 of wild blueberry muffins.I'm looking for a recipe or even a commercial mix that would be suitable. Chef Posted February 21, 2006 Share Posted February 21, 2006 How about baked Blueberry Frech Toast?Ingredients:1-2 C. blueberries4 cups large-chunked(cubed) bread--french prefered.8-oz. diced cream cheese6 eggs, beaten1-c. heavy cream4-tbsp. ground Cinnamon1/4. cup granulated sugar1/4 c. maple syrupMix eggs,cream,syrup, sugar and cinnamon together in a large mixing bowl.Butter a 9x9 or 9x12 oven-proof glass baking dish.Toss blueberries with bread chunks in large mixing bowl, then mix with wet ingredients, add cream cheese pieces last.Gently pour mixture into baking dish and bake covered (tinfoil) at 350 degrees for appx.20 minutes, remove tinfoil cover and complete baking, appx. 10 minutes or until its firm to the touch.Let stand 5 minutes, cut into large squares and serve with hot syrup.Appx. 4-6 servings.
