WILD BLUEBERRIES

I've got a whole pile of wild blueberries in my freezer from last summer,looking to make a batch or 2 of wild blueberry muffins.

I'm looking for a recipe or even a commercial mix that would be suitable. Any other ideas???

How about baked Blueberry Frech Toast?

Ingredients:

1-2 C. blueberries

4 cups large-chunked(cubed) bread--french prefered.

8-oz. diced cream cheese

6 eggs, beaten

1-c. heavy cream

4-tbsp. ground Cinnamon

1/4. cup granulated sugar

1/4 c. maple syrup

Mix eggs,cream,syrup, sugar and cinnamon together in a large mixing bowl.

Butter a 9x9 or 9x12 oven-proof glass baking dish.

Toss blueberries with bread chunks in large mixing bowl, then mix with wet ingredients, add cream cheese pieces last.

Gently pour mixture into baking dish and bake covered (tinfoil) at 350 degrees for appx.20 minutes, remove tinfoil cover and complete baking, appx. 10 minutes or until its firm to the touch.

Let stand 5 minutes, cut into large squares and serve with hot syrup.

Appx. 4-6 servings.
