I am looking for any recipes for goose sausage. I took a trip up to Canada this year and I need to starting eating them up. I have made some jerky already but I was thinking about making some sausage. I heard that there is a fella near Mankato that makes it but I would like to try it myself. Any help or recipes would be much appreciated. Thanks.

Any of the pre-made sausage seasoning packs you buy at the sporting goods stores work well with geese. Just make sure to add some pork shoulder to it when you grind it... otherwise it will be to dry. I've made goose brats and goose Polish before and they were both good... had goose stix made once at the butcher shop, they were O.K. but not great, I really didn't care for them like I do venison...
