Recipes for Duck??????

I always breast out the duck marinate in orange juice or BBQ sause over night then wrap in bacon, very good way to eat them, but i would like to try something new...Anyone have any great ways to eat duck???? Lemme know.

This may sound a bit odd, but I like to make Duck Parmesan! (instead of chicken parmesan) smile.gif

What I do is take the breast meat, put it on a cutting board, take a roller and pound the heck out of it until it's flat, then dab the meat in Italian seasoned bread crumbs, fry the breasts in the frying pan until the bread crumbs are golden brown, then put them in a glass pan with spaghetti sauce and bake them at 350 for about 20-25 minutes. Then, pull them out, put some shredded cheese over them, put them back in for another 5-10 minutes until the cheese is melted and slightly browned, then eat the heck out of them along with some pasta to use up the leftover spaghetti sauce.

Sounds a bit weird, but my wife was going to have chicken parmesan one night and I thought I'd try duck instead. That's how I eat nearly all my ducks now. The sauce keeps the breasts moiste and they don't really taste all that gamey either. I'd recommend it to anyone who likes to eat ducks (or geese....works with them too, but I cut them up into smaller chuncks and have lots of leftovers).

MY favorite id Crispy Fried Duck

I clean it in to strips or Large pieces depending on breast or thigh/leg

I Soak it in buttermilk overnight then Season it with paul prudommes Poultry magic then dip it in flour, then egg, then crunched up Cornflakes and fry it until it floats served with a raspberry-habenero dipping sauce

If you soak for more than 5-6 hours it starts getting tough

but I can get people to eat basket full before they even ask

I just made some duck the other week that was unreal. The recipe is on the Delta Waterfowl site. Just go to that click on waterfowling, then click on "camp chef recipes". It's called like grilled soy duck or something. All you have to do is combine about 8 things, marinade it for a few hours to days, then grill it. It was unreal. I honestly can't wait to have it again, ive never said that about duck before.

we grilled a bunch of ducks this weekend and it was excellent. marinade in flavor of choice for a few hours, then grill at the same temp you would any steak. the whole key is dont let them get past medium rare or the gamey dry taste will overpower the meat. one other favorite of mine is making a "shore lunch" cube up the breasts, coat with a shore lunch type seasoned breading, and fry em up like chislic. slice some onions and mushrooms and dip them in the batter and fry them right in with the ducks. quick easy and very very tasty.

I marinate in Italian salad dressing overnight and cook on grill rare.

My brother likes duck fajitas. Cut in lengths and fry with onions, peppers, seasonings and wrap in a soft taco shell. Lay on some cheese and salsa and your good to go.

Rare/light medium is the key!! So many people over cook ALL forms of game and that is the biggest reason they dislike the taste. My wife had been fooled with grouse/pheasant & duck/goose fajitas more than once. I cooked some Elk steaks for a friend and he thought it was the best beef he had ever had
