0 HoleHopper
I just got done redoing the inside of an old Cherikee speed boat. and I opted to ripping the old stuff out. Just could not see putting new over the old. Though I would see very litle wrong with just covering the old. I think it is really up to you. I am glad I am just about done restoring that thing. 0 Surface Tension
You can get a high quality vinyl at a fabric store but you may want to search out a UV resistant vinyl. Best place to look for that might be a awning shop. The way to cover the seats is pull the old cover off and take it apart at the seams. Once the old cover is all apart you use that as your pattern.
