Your best bet might be to just head a little further south and hit Prior Lake. Not a lot of options in the immediate area of Mall of America, especially with this recent snowfall... getting around on the ice will be tough. Unless you plan to bring a snowmobile? If you head down to Lower Prior Lake you can at least take a plowed road out to some fishing spots...
