They all have their ups & downs but they all will work. How much money do you want to spend and how much effort do you want to put out? Once you know those two answers, go shopping.

Smoked duck is a treat we enjoy at the end of the season. The birds work much better in a smoker when they have a thick layer of fat.

Smoked pheasant is out of this world but is much harder to prepare properly. The skin must stay on the bird and they go from not-quite-done to shoe leather in a matter of minutes.

I have a Bradley, works great, load it set the timer and walk away. I've smoked everything in it. I have the glass door and use a taylor thermometer for temp control. the temp. at the bottom of the unit will differ from the top rack.

I want a weber smokey mountain I'm not sure I can justify a $400 purchase for something I'll use maybe 4 times per year.
