How much money do you want to spend and how much effort do you want to put out? Once you know those two answers, go shopping.Smoked duck is a treat we enjoy at the end of the season. The birds work much better in a smoker when they have a thick layer of fat.Smoked pheasant is out of this world but is much harder to prepare properly. I have the glass door and use a taylor thermometer for temp control. the temp. at the bottom of the unit will differ from the top rack.
