Panfish Grilling Techniques

While everyone who visits this forum is passionate about catching fish, I'd bet that 98% of you are just as passionate about eating their catch! My wife and I do our best to eat healthy but... ya just can't beat "fried" fish. Pan fried, deep fried, shallow fried or whatever, they're just plain good to eat that way. However, not the most healthy.

Every fine American has a charcoal grill in their garage. Give us your favorite grilling techniques for panfish.

I like to put fish on a chunk of tinfoil with curled up edges to keep in the juices. Throw a butter on them and whatever seasonings you like. Sometimes I even make a tinfoil pouch and somewhat steam them while they cook on the grill. Healthy cooking if you don't use the butter. I imagine the steam method would still work just fine. The open tinfoil method might result in some pretty dry fish. I don't limit myself to panfish here either. Walleye is also great this way as is salmon.
