Evinrude outboard question

I was driving around a lake last fall in my boat about 3/4 throttle and all of a sudden an alarm went off and the motor RPM cut to about 1/4. It seemed like the overheat alarm. There was water pumping out of the hose for the water discharge. I let the motor idle for a couple minutes (water still pumping out) and then I shut it down, waited about 5 minutes, and fired it back up again. Then I went back to the launch about 1/2 throttle with no problems. I'm thinking it is probably a bad temp sensor but I'm not sure. I wasn't able to take the boat out again after that day to see if the problem happens again. The water coming out of the water discharge tube was warm but not hot (about the same temp as bath water)

anyone have any ideas?

the Motor is a 40HP evinrude from 1997. The motor was oil injection but I blocked that off due to problems with that so I mix oil and gas now.
