quick and easy little etoufee

Hey guys for lunch today I made a little rice etoufee and thought I would share. I don't know where I picked up the recipe but whocares! hope yall enjoy

Your going to need:

1lb andoui

10-12oz crawfish tail meat(or shrimp i spose)

1red bell pepper

1 dried ancho chili diced up

2-3 tablespoons garlic minced

1-2tablespoons chili powder

salt and pepper to taste

1.5 cups dry rice + 3.5 cups water(just a bit more water than is needed to cook the rice)

Rice seasonings:

1 tablespoon chili powder

1 teaspoon dill

1 teaspoon tumeric

2 teaspoons onion powder

dash of cumin

dash of cayan

Take a deep pan(I use my big wok) get it hot then add about 4-5 tablespoons olive oil(note i skip the traditional flour to make a roux). Throw in the minced garlic, the bell pepper, dried ancho. Throw in the andoui, chili powder, and salt pepper. Cook until the andoui starts to brown. Throw in the crawfish and toss.

Add rice and rice seasonings then toss until the rice browns just a bit.

Add the water about 2 tablespoons of butter and cover stirring every 3-4 min until the rice is soft.

There should be some liquid still at the bottom when the rice is soft. Toss and Serve.
