I have the Galaxy S on Verizon and yes, even in spite of the Verizon stuff on the phone the Navionics map works great. T-Mobile should be a go as well since their phones are more open. I just downloaded the new version and everything works like it should. Be sure to have wireless access enabled when you download, it is a very big file.

If your phone is running Android 2.3 (Froyo) OS, then the ability to set the screen to "Stay Awake" when plugged into a dock/charger is gone. You can get a free app called "Screen On" from the market that you can set to keep the screen on while on the charger. That will keep the screen on when plugged into your charger/car/boat/whatever. It is VERY nice when exploring around since you do not have to constantly wake up the phone.

The display on the Galaxy S is tough to see in direct sunlight so that is a negative, but it is the only bad thing I have found so far. Also, get yourself a rugged case for the phone. I just bought an OtterBox case that is very nice.
