DIY Post-Frame Site Prep

I am looking at building a 60x40 post frame building with 24x40 of it being a shop with in-floor heat, the rest will have a gravel floor for machinery/ hay storage.

The current site has two old graineries on it that will be torn/burned down, and is fairly level and should only require fill on one corner.

So my questions are:

Am i correct in assuming all black dirt must be removed, or do i just take enough out to add in the proper amount of gravel/sand

What is the proper amound of gravel, 6"?

What kind of base is needed for the concrete/ how far down do i need to go.

I am sure the concrete guys will tell me when i get that far but i am curious

Anything else i should be aware of?
