Anyways, I'm still snapping photo's and I haven't stopped running the barbecues and smokers..... in fact in '09 I became a KCBS Certified Barbecue Judge and have learned even more being around all the pros. Fall fishing is in full swing in Wyoming, and here is just a small taste of what I've been up to in the last two weeks. These trout fillets were done with my dry cure. I have 8 more in my beer fridge that cured overnight that I'll be smoking later today. Some of my friends are going to be pretty happy! Thanks for looking. My brother gave me a taste of his smoked salmon spread or I really should say a bowl of spread that between my brother,wife and me it took no time to finish off and I can't help but look at those fillets and think about a making a batch.
