Chef Posted March 15, 2010 Share Posted March 15, 2010 Mix some Prudhomes blackened seasoning with progresso fine bread crumbs 30/70 ratio, put it into a shake bag. Place your Perch fillets in the bag and shake to coat. Arrange fillets on a non-stick baking sheet and place into a 400 degree oven for about 10 mins.This is almost Zero Fat if that's what you're aiming for, or about the lightest coating you can put on a fillet and still season it well. I love that stuff though I've never used it for baking fish... but it would be fantastic as a seasoning.
