crawfish

Two questions about crawfish:

1) I am wondering at what time of the year or even at what water temperature do crawfish shells change to the bright red color.

2) I know crawfish have amino acids in their body but i am wondering what specific amino acid do they give off when excited or do they have in their bodies.
