I do eat cats, channel cats. I typically like those 3-4 pounders since they haven't been in the river systems as long as the bigger fish. That size fillets up pretty nice as well.

As for the flats, I haven't eaten one and don't really have a desire. They are a sportfish for me and I practice strict C&R. With that said, if I have a fish that doesn't want to release some day, I'd rather eat it than let it float down river. I just hope it won't come to that. I've had a few flats where I've had to hang over the boatside with them for what seams like 10 minutes before they swim away. So far, I've had them all swim away though.
