Icon Posted September 27, 2004 Share Posted September 27, 2004 Make Ka-bobs. I like to marinate first then wrap the meat with bacon. When I've done duck breasts like this when the bacon was done the breast was done. it was a little on the medium rare side but I prefer it that way. If you would like it more done cut the breast in half. I even took an apple slice and wrapped the breast around it before wrapped it in bacon. Farley Posted October 5, 2004 Share Posted October 5, 2004 We usually use soy sauce, and some kind of Teryaki seasoning, I'll have to aak my buddy, he is the one with the killer marinade. Also it helps to soak the meat overnight in salt water to get rid of the blood. We did this last weekend and we didnt marinate them at all, just a little salt, pepper, and fish seasoning (it was like a lemon pepper kind of mixture), cooked them in the oven wrapped in bacon.
