Being 1/2 Czech, this one came from the St. Wenceslas Cookbook (that's right, the Catholic church in New Prague). I did some up this weekend, but they're not done pickling. I think it takes a week.Pickled Eggs2dozen eggs1 large onion, sliced4 tsp. salt2 T. sugar 1 T. mixed pickling spices¼ tsp. pepper½ cup water2 cups white vinegarPut boiled eggs in jar; add onion. Boil other ingredients together and pour over eggs. note - I had to do two batches of brine to cover up 2 dozen. Also, I put the pickling spices in a cloth, and tied with string, rather than letting the pickling spice "swim around."I've tried one, and it's pretty good.
