Homemade head cheese

Had someone I knew that I lost contact with that made "headcheese", but I remember him saying he used "pork butts" instead of "snouts etc.".

Anyone have a recipe for making headcheese using butts? His head cheese was excellent!

Not Butts, hocks. They work great.

Just boil the heck out of them with some salt and pepper. You could experment with other spices if y0u like. When meat is falling off the bone, remove and dice the meat and toss the bone. Return to liquid heat and pour into loaf pans lined with alum. foil, enough extra so you can wrap the loaf. Place in fridge until it sets up. Fat solidifies on the top and can be delt with.

Slice and drench in vinigar or what ever. Makes great sandwiches.

I have added crushed hot peppers, if you like hot it's great.
