Aquaman01
A couple of weeks ago we were having a family fishing/boating outing and trolled up a 1/2 dozen Norts between 20" & 24" from a lake that posts signage encouraging harvest of all pike caught due to overpopulation and stunting. My kids (7 & 5) hate Y bones and I didn't have time to perform the necessary surgery, so I just filleted 'em and froze 'em. Today I came up with an AWESOME recipe for patties that does away with the surgery, and has a delicate, family-pleasing flavor. (2) cubes chicken bullion (2) large carrots; grated (1/2) tsp minced garlic (1/2) tsp dried parsley (2 pinches) salt In small saucepan boil 3/4 cup of water and add bullion cubes and carrots. Boil until water turns orange. Reduce to simmer and add garlic, salt and parsley. Simmer for 20 minutes. Remove 1/4 cup of mixture and put in freezer to cool. (1 1/2) lbs pike meat (no ribs, Y bones okay) Minced in food processor, blender or with a trolling motor prop and a 5 gallon bucket. **smaller pike have smaller Y bones and are more likely to dissolve. I used 22" fish and had some un-dissolved bones.** (3/4) cup italian bread crumbs (1) egg Take ground pike, egg and bread crumbs and thoroughly combine in bowl. Add cooled carrot/chicken goop and mix. Mix should have the stiffness of biscuit dough. Heat up 1/4 cup of high-temp oil to smoking in 10" skillet. Form mix into 1/2" thick patties and coat lightly with 50/50 flour and bread crumbs. Fry in clean oil to golden brown, serve on bun or bread with cheese and garnish. The bones 'cook out'. Freeze the remaining carrot/chicken goop and use for soup base, poaching liquid or whatever. Bone-less Apetit!
BAIT956
Sounds pretty good Rob. I'm going to try this with catfish too. I'll let you know how it turns out. With the change in the weather, you'll soon be able to chill the mixture outside instead of in the freezer. Never tried blending with a trolling motor prop in a 5 gallon pail, but any port in a storm. Should work with margaritas too. Guess it would be a good idea to clean the prop off between uses. BAIT956
O.k. I tried the trolling motor in the 5 gallon pail. One word of caution. Do not start out the trolling motor at the highest speed. I've got margarita mix all over me. Now I'm stuck wringing out my sweatshirt to get a drink. Start out slow and then crank her up. If you've got a big motor, high speed is a bit much. I was tempted to try it with a small outboard, but didn't want to bother cleaning the algae off the lower unit. Why wouldn't it work in a 55 gallon barrel? Aquaman01
A 55 gallon drum would work Someone should call Minn Kota and ask what speed makes the best marguerita! Small outboard doesn't work. My wife took issue with me using our food processor for fish so I tried the old 2.5 hp sea horse. Purees just fine but it sucked the liquid pike right into the cooling intake. Now whenever I use the motor Sven & Ole follow me all around the lake. Recipe should be great for catfish.
