Sunfish Burgers

Tried a new approach to cooking up some bluegills today. Cooked the 12 fillets in a pan with Mrs. Dash sprinkled on top. No oil added, just meat. I used a no stick pan. Busted up the meat into small pieces. Poured the meat into a bowl containing broken pieces of saltines (not crushed pieces) and 2 raw eggs. Mixed it all up with my spoon and formed them into 4 loose flat patties. They wanted to fall apart so I formed them in the pan. Just a touch of oil in the pan and cooked them up like burgers, cooking each side until they were crisp. Throw it in a bun with a little lettuce and which ever dressing you would like and we had as I called them "sunnie burgers". They were fantastic and quite healthy because they weren't fried in oil like I usually do. It may look weird but they tasted great. I get tired of frying fish so this was a nice variation since I can't stand baked fish. Any other nice ways to cook up some panfish?

I make a similar patty. I use a food processor. Fish, dried bread crumbs, crackers, celery, onion, some mayo or Miracle Whip, and egg(s). Grind it all together. I use an indoor grill (Sunbeam 2-sided. Similar to a Foreman grill) to grill up these. Just make sure to spray griddles with Pam oil. With the mayo, the taste of these patties is similar to stuffed clam meat, etc.

I also use this grill for fish fillets too. It is healthier than frying, and tasty. But of course, once in a while I gotta have some plain fried fish.
