Eating Carp?

I've never eaten carp, but after looking at a few contaminant consumption advisories for top-of-the-chain predators versus fish that eat bugs and plants, carp are lookin' pretty attractive. Any info and/or tips on carp eating?

I've heard they are really greasy... and that they are best smoked/pickled... but this could be urban legend. A lot of people think they have a "muddy" taste to then; but then again I hear a lot of people assume that of Catfish as well... and I LOVE catfish

grind up the meat and make it in to patties. Add some onions to give it more texture and taste.
