BobT Posted November 30, 2007 Share Posted November 30, 2007 When drying your jerky be sure to wipe off excess moisture as it comes out of the meat. This could be part of the problem. Also, I suspect that the mold is because you aren't drying it down enough. Mold needs moisture to grow. Even though it is dried, it is still recommended to keep jerky in a cool area.
