Jim Almquist
My local meat market has 93/7 ground beef on sale for $2.99/lb in 10lb bags. Is this too lean for summer sausage ? reinhard1 and lovebigbluegills
reinhard1
That's a great price Jim. I would go with 85/15 myself. I have used 80/20 also with good results. I use powdered milk as a binder to hold in the moisture also. This week Cubs has 85% ground beef in 3 pound tubes for 2.66 lb. [7.98 per tube]. good luck. lovebigbluegills
Jim Almquist
I was thinking that may be a little too lean for getting the most flavor. The little store by the house always has 80/20 for $2.79. might just have to get 10lbs from each and mix so it would be close to 85/15. lovebigbluegills and reinhard1
KEN W
93/7 is a little lean. The fat is what binds the meat together. Without the fat the sausage might get crumbly. As Reinhold says....85/15 works well. But you can also use 80/20/. reinhard1 and Jim Almquist
