fish sausage ----great camping idea

Fish Bratwurst:

2 1/2 pounds of fish fillets ground course. [i use northern pike]

2 1/2 tbs water

1 1/2 tbs salt

1/2 tsp white pepper

2 1/2 tsp sugar

1/4 tsp coriander

1/4 tsp marjoram

1/4 tsp mace

mix together well and stuff into casings or form into patties and fry in oil till brown and done. i double the reciepi and stuff into casings. i catch the smaller pike and fillet them and take the y bone out. i freeze the fillet first and then grind after they are almost thawed out. great with fried potatoes. i'm talkin fried tender yet crispy. i prepare them by simmering the links in beer and onions just like any brat and then brown them on the grill. dont have a stuffer, well pattie them out and fry them in oil and put the pattie in a toasted bun with tomatoe and lettuce and tarter sauce. if you dont have a grinder use a food proccessor but do not over blend. you want the fish to have some body so keep it course. good luck.

i take the y bones out since i grind them course and only once. they dont dissolve in frying like they do in pickling. milk would be a good idea instead of water, and eggs would make a good binder as well. i'll try that add on a smaller batch next time to see how it works. it's sausage after all grin. good luck.

big thanks for the 2 times salt thing. for the 2 1/2 first salt entry it should be water or as you suggest milk. either one. guess i had salt on my mind. thanks for your suggestion. i will try that. good luck.
