Tom Linderholm Posted July 28, 2006 Share Posted July 28, 2006 As your gardens begin to overflow with produce you may need to start looking for some easy ways to utilize it.This is one I put on for WDIO Tv this morning:Tomato Bruschetta with Fresh Mozzarella2 Heirloom Tomatoes½ cup chopped Basil½ cup chopped red onion1 Tbl. Chopped garlicMix the above ingredients together and set aside.1/2 Lb of Fresh Mozzarella24 pieces of crostini or water cracker Begin by layering the mozzarella on the crostini and top off with a tablespoon of the tomato mixture. Continue till ingredients are used up.Next drizzle each piece with a little Extra Virgin Olive oil and a bit of balsamic vinegar.Enjoy! Link to comment Share on other sites More sharing options...

The Crostini is basically french bread brushed with herb & garlic infused olive oil then baked till crisp. So it sounds like she is right on the money.
