ac777
I was just wondering what the best recipes were for smoking carp. I will have my smoker ready in a week or so and have a few questions about carp. When smoking, is it best to leave skin on fillet, or take off? What are some tips?Any help appreciated. Thanks, AC
goblueM
I haven't ever smoked any myself, but I had it filleted but with the skin on. It was great. For all my fish I use a pretty standard recipe, just google some and pick what you likePersonally, I'd get my carp from the St. Croix or a clean lake if I were gonna smoke them

goblueM
St. Croix is one of the cleanest, most healthy rivers in the state... I'm not talking the lower Croix down where it joins the Miss, but it's not too bad there either
ec30_06
If you like carp smoked try buffalo. I am told it tastes a lot better.
