Leaky
Does anyone know how long a bottle of wine is good for (to use in cooking) after uncorked, recorked and refrigerated?Same question with a can of chicken broth?
Tom Linderholm
Leaky, On the wine it is generally good for about a month. Pop the cork and take a sniff. If it smells like vinegar then it probably is vinegar. In this case toss it, otherwise its good to go. We generally will still serve our wines by the glass up to a week after corking after that they hit the kitchen for other use. Unfortunately I cannot help you on the chicken broth, I have always made my own.
Leaky
Excellent - Thanks Cheffery. I've made my own stock and froze the leftover for soup down the road. But I opened a quart of canned stuff to braise some ribs and had a bunch left over. Not sure if it goes bad in the fridge or not. I've had it for about a week now.Anyone one else?
