I have made it by grating roots I purchased at a grocery store  (byerlys in Edina just off France to be specific)   After grating it is mixed with vinegar to stop the heat from degrading as I recall.

It's a root. Wash it, clean it. I use a pressure washer then scrape the tough spots. Grind add a bit of salt, vinegar and I arc some lemon juice till slightly soupy. Not to much. But in jars, I like the small glass baby food jars. I like to let it set in a frig for a day or 2. Then freeze. After it's frozen I wrap them in brown paper bags. This keeps it hidden from lite that keeps it white a lot longer

What internal temp did you smoke it to before searing?  Also, what temp did you set the grill?  I usually do 275 and get the internal temp of the meat to 115 and then sear.  Some guys use a lower smoke temp to start for more smoke flavor, but I have never done it that way.  That looks great!

I smoked it at about 250 until it was an internal temp of almost 120. Then I took it off the grill and wrapped it in foil. I turned the grill up to high and opened the sear plate. In about 10 minutes I set the tri-tip over direct flame for about 3 minutes per side. After that, the tri-tip was an internal temp of about 130 so I pulled it and let it rest before slicing.

i need to find a box to put it in, and i'll have my wife send it off on monday so by chance it doesnt sit over the weekend. it wont hurt or affect it getting thawed out then refroze.
