best tip for frying no matter what ingredients you use is that after fried put them on a cookie cooling rack. They stay way more crisp than placing on paper towels and hot for a very long time.

I just heard about this for the first time last year. Putting the fish on a wire rack instead of paper towels makes them stay crisper for longer.

Parmesan Panko Crusted Walleye

Marinate fillets 2 hours in lemon juice, olive oil, salt and freshly cracked pepper.

Mix Panko crumbs, Parmesan, chopped Parsley, garlic powder, salt & pepper

Toss mixture then coat fillets with it

Put cooling rack on a foil covered cookie sheet

Place fillets on rack and refrigerate for 20-30 minutes so coating stays on while baking

Bake in 450 degree oven until fillets are flaky and tender and crispy on the outside

Place on a sprayed piece of foil.  Drizzle lightly with oil, salt and pepper, top with lemon slice.  Grill till flaky.  This creates a very clean tasting piece of walleye.

Here's one we tried. Place walleye fillets on bottom of baking dish. Layer on sliced onions and then brush on Catalina salad dressing. Repeat for another layer. I don't recall but I'm betting we baked it at about 350 until flaky.

I remember the first time I ate Walleye. It was at a Friday night Fish Fry in Wisconsin....it was a major epiphany for me.
