This is going to sound boring but I like them chunked up, rolled in saltines and deep fried. There was a fish (Walleye) cake recipe on here a while back I've tried and that turned out great! Good luck and let us know how things turned out for whatever you decide to do.

Cajun Baked Catfish

2 tbls canola oil

2 tsp garlic salt

2 tsp dried thyme

2 tsp paprika

1/2 tsp cayenne pepper

1/2 tsp hot pepper sauce

1/4 tsp black pepper

4 aprox 8 ounce fillets catfish

in a small bowl, combine the first seven ingredients, brush over both sides of fish. place fish in a 13 in. by 9 in. by 2 in. baking dish coated with nonstick cooking spray. bake at 450 deg for 10-13 minutes or until fish flakes easily with a fork. good luck.

When I had a houseboat on the St. Croix I lived for catfishing. I only kept under 10 lb. channels. I smoked them and called them St. Croix salmon. They smoked up great and remained great even after freezing. I always brought them to deer camp as of course St. Croix salmon.

That sounds good! I like to bake them as well but I just use Cajun Shore Lunch on them.

couple cups of flour

season it with season salt

chili powder

touch of cayanne

garlic powder

onion powder

you could skip these seasonings and just use a bunch o cajun seasoning too.

pour beer into the flour until it is a thick batter consistancy(think pancake mix).

dip the cats and deep fry for some beer battered goodness

and don't forget to drink what didn't go into the flour!
