Enchiladas

I don't know if anyone likes mexican food, but here's an enchilada recipe I have been working on and now is perfected. Enjoy!

BEEF OR CHICKEN ENCHILADAS

ENCHILADAS

1 cup shredded beef (from leftover pot roast is good) or chicken

½ cup frozen corn

½ cup rinsed black beans

½ cup medium diced onion

1/3 cup medium diced raw jalapeno peppers-membranes removed

1/3 cup sour cream

½ tsp cumin

½ tsp chili powder

Shredded monterey jack cheese or similar

1 large can enchilada sauce red or green. LaVictoria is good

6-8 small flour tortillas

*Heat oven to 450 degrees

*Generously spray a 9x13 pan with cooking spray and coat bottom with about a third of a can of the enchilada sauce

*Mix first 8 ingredients together

*Take 2-3 flour tortillas at a time and heat in microwave for 20-30 seconds until soft

*Take a ¼ cup of the filling and put on soft tortilla

*Sprinkle with cheese and roll up. Don’t fold ends.

*Arrange enchiladas in pan leaving space between the enchiladas (don’t crowd)

*When pan is filled, cover enchiladas with more enchilada sauce. Set aside leftover sauce

*Cover with foil and place in hot oven for 25 minutes

*When done, put on dinner plate. Take any leftover sauce you might have and cover enchiladas with sauce and a little bit of shredded cheese. Put in microwave for 30 seconds or so until sauce is hot and cheese is melted.

I do something very similar for enchiladas. The major difference I think is the way I arrange them in the 9x13 pan. I twist them a bit so they form a couple corners in the pan. One side gets refried beans with cheese on top and the other side gets extra sauce or dirty rice.

Good stuff.

I was in a pinch one day and just made them with refried beans, cheese, sauce, peppers and onions. They turned out pretty good for broke food.
