Aging deer meat

With the hide on there is no such thing as cooling quickly. That hide can hold the heat for a long time unless it really gets cold where the carcass is at.

Really long time!!

I once hung a deer at 8:00 AM, in the shade, with a good breeze, with a temp of near zero. It hung all day and the temp reached the low twenties. We skinned it at 8:00 PM and the loins were at least 60 degrees yet at that time.

The hides come off all my deer at rapidly as possible.
