Corn Bread Recipe

Since I just posted on the rib post, I figured I'd share this one. What better to go with ribs, than cornbread!

This is how I make my cornbread:

2 boxes of Jiffy mix.

Follow all of the instructions except...

Double the eggs (make it fluffier)

and...

Instead of milk, I use one can of creamed corn

Cook in a rectangle dish, not muffin style.

When it's done, I add a honey/butter glaze to the top of it. (nuke butter and add honey until there's a good mix)

If you want it to taste extra good, before cooking, mix pieces of roasted chili peppers into the batter.

YOU WILL NOT BE DISAPPOINTED!

Plus 1 tablespoon of vegetable oil per box; and 1 tablespoon of sour cream per box if you're feeling lucky.

IFallsRon,

I never thought of the sour cream before. I usually grease the pan with veggie oil beforehand.

What does the sour cream and veggie oil do for it?

Box instructions say to mix the batter a little lumpy. A bit of oil and sour cream (also makes the bread tangy tasting) helps make a smoother, softer bread.
