Brine recipes

This is what we do for turkey and works out great

1 cup of salt

1cup of brown sugar

2 oranges quartered

2 lemons quartered

6 sprigs of thyme or 2 Tablespoons dried thyme leaves

4 sprigs of Rosemary or 2 tablespoons dried rosemary leaves

2 gallons of cold water

Put into a large stock pot, bucket, etc to hold turkey/brine. Mix salt and brown sugar w cold water until dissolved, add squeezed oranges/lemons and thyme and Rosemary. Let sit in frig (or this time of year in your garage) covered for 24 hours. Remove and rinse inside and out, pat dry and smoke away.
