Orzo Pasta Salad

4 C. cooked Orzo

3/4 C. crumbled Feta

Zest from 1-fresh Lemon

1/4-1/2 C. coarsley chopped Calamata Olives

1/4-1/2 C. Coarsley Chopped Roasted Red Bell Peppers

1/4 C. (combined) Fresh Chopped Parsley, Rosemary, Tarragon, Oregano.

1-Large Chopped Shallot

1-Clove Crushed Garlic

Dressing--3-Tbsp. Fresh Lemon Juice, 2Tbsp. Dijon, cracked pepper, 2Tbsp. Red Wine Vinegar, 3/4 C. Olive Oil--combine all ingredients.


Rinse al-dante Orzo w/cool water, place in large stainless or glass bowl, toss in all ingredients, mix and then add dressing to taste, let flavors blend 30-60 minutes if possible before serving.

You can add salt or more cracked pepper to your taste.
