Easy Shredded Chicken Tacos

The last post by Doop had me thinking about making chicken tacos again.

Basic Recipe

4 boneless skinless chicken breasts

2 cans Ro-tel diced tomatoes with green chiles

Place chicken breasts in crockpot with both cans of tomatoes. Set on low and let cook 8-10 hours. I usually do this in the morning before work and when I get home just stir up the meat. It should shred apart really easily. Place in tortillas with condiments of choice.

Thats the basic recipe, I like to add diced garlic and onion. Sometimes we also add some corn and dark kidney beans during the last hour of cook time.

The great thing about this stuff is that you can use it for other meals as well. Place the shredded chicken in flour tortillas with some shredded cheese. Roll up, place in lightly greased baking dish and pour enchilada souce all over it. Top with cheese and bake until warm through. Another option is to throw the shredded chicken on some nacho chips with cheese and all your favorite fixings for some chicken nachos.

It's almost too easy!

Thank you for this quick and easy recipe! I tried it out yesterday, and it was great. We put the chicken on soft shells with some lettuce, salsa, cheese, etc. Had a little left over for lunch today - nuked it in the microwave and put it on a hard roll.

Time for my nap now....
