Brownie77 Posted June 2, 2009 Share Posted June 2, 2009 I think I am a rarity on this board as I will take my medium heavy rod with a box of crawlers and take a half hour go catch a limit of small channels for the table, anyone got any recipes, eggs crackers, and frying them is getting a little old. If you get bored take a look in the recipes forum. Look back a few pages. Last year there were a couple catfish recipes there. Here is one I found last year and I think it was from the recipes forum:Beer and Mustard Catfish-1/2 can beer mixed with 4 tbsp mustard-Dip fillets in mustard/beer mixture-roll in cornmeal & flower-fry in hot greaseI have not had a chance to try this recipe yet, so if you try it let us know how it tastes. Barbelboy Posted June 3, 2009 Share Posted June 3, 2009 Cajun blackened-Do this outside, it makes some smokeBuy some blackening seasoningseason the fillets on each sideheat a cast iron skillet on the grill, make sure its very hot, you want it 350 or more (side burners make this a lot easier) put a good sized scoop of butter in the skillet. once the butter is melted and spread around the skillet throw the fillets in.give 'em about a minute or so, flip, then another minute or so. serve the fillets over rice or with anything you want. It's a nice change from breaded fried/baked catfishOr just buy one of the common jumbalaya mixes. Follow the recipe, just add cubed catfish. Catfish jumbalaya, yum!
